One of the healthiest eating habits you can make is to add vegetables to every meal. Get creative and make eating fun and tasty. Here are some meal ideas.
- Wrap 3-4 short asparagus pieces with bacon and place on a broiler pan in the oven. Bake at 425 for about 15 minutes, then keep checking each minute to see if it's done. The grease falls through the holes and the bacon wraps tight around the asparagus. (Resource: Veronica from Freeport, TX)
- Cube up a rutabaga and saute in butter, your choice of seasoning, and add in some carrots and broccoli for color. Pour this over rice for a healthy stir fry.
- Cook up a Walla Walla sweet onion in the Air Fryer and make a bloomin' onion for an appetizer. (Resource: Steve from Lewis County, Washington)
- Snap peas are great picked fresh, but they can also be added to stir-fry medleys.
- Spinach - it takes on that spinach flavor once its cooked. Use it FRESHLY PICKED in salads and smoothies to add nutrition without the spinach flavor. If you like more of the spinach flavor, add some baby spinach or chopped spinach to your scrambled eggs or quiche. - Cauliflower is so versatile. Cauliflower pizza crust is a great substitute if you are trying to decrease your bread intake; add a cup of chopped cauliflower to your meatloaf and get your family to eat it a whole new way. You can also blend cauliflower in a mixer and make homemade cauliflower rice to replace the starchy rice for a healthier alternative. (Resource: Kathy from Washington)
